Capsicum Rice
Capsicum Rice is a vibrant South Indian-style rice dish made with colourful bell peppers, roasted spices, and cooked rice. It's quick, delicious, and packed with flavour.
Main Ingredients
- 2 cups Rice
- 2 Capsicum (green, yellow, red, orange mix)
- ½ tsp Mustard seeds
- ½ tsp Cumin seeds
- 1 tbsp Cashew nuts or Peanuts
- ¼ tsp Turmeric powder
- 1 tbsp Oil or Ghee
- Handful of Cilantro (finely chopped)
To Powder
- 1 tbsp Coriander seeds
- 1 tbsp Urad dal
- 4 Dry red chillies (or as required)
- 1 sprig Curry leaves
- 1.5 tbsp Grated coconut (or 1 tbsp sesame seeds)
Method
- Cook rice separately, spread on a tray, and allow to cool.
- Dry roast ingredients, cool, and grind to a fine powder.
- Heat ghee/oil in a pan. Splutter mustard seeds, cumin seeds, cashew nuts (or peanuts), and curry leaves.
- Add chopped capsicum and sauté until slightly soft.
- Mix in the prepared spice powder, turmeric powder, and salt. Fry for a minute.
- Add cooked rice and stir gently until each grain is coated with spices.
- Adjust seasoning and garnish with cilantro and sliced bell peppers.
Serving Suggestions
Serve hot with raita and potato chips. Pairs well with both vegetarian and non-vegetarian side dishes.
