Sweet Rice (Mutanjan)
Sweet Rice, known as Mutanjan is a festive, colorful dish made with basmati rice, sugar, dry fruits, and aromatic spices. It is often served on special occasions and is loved for its rich taste and vibrant appearance.
Main Ingredients
- 2 cups Basmati Rice (soaked 30 minutes)
- 1 ½ cups Sugar
- 1 cup Milk
- Food colors (red, green, yellow, orange) – few drops each
- 4 Green Cardamoms
- 3 Cloves
- 1 small Cinnamon Stick
- 4 tbsp Desi Ghee
- 2 tbsp Raisins
- 2 tbsp Cashews
- 2 tbsp Almonds (sliced)
- 1 tbsp Coconut Flakes (optional)
- 2 drops Kewra Essence (optional)
Method
- Boil rice with whole spices until 80–90% cooked.
- Divide rice into 3–4 bowls, adding different food colors to each portion.
- In a heavy-bottomed pot, heat ghee and add cardamoms, cloves, and cinnamon.
- Stir in sugar and milk, cook until sugar dissolves.
- Gently layer the colored rice portions one by one.
- Sprinkle fried raisins, cashews, almonds, and coconut flakes between layers.
- Cover and cook on low heat (dum) for 10–12 minutes until rice is fluffy and fragrant.
- Drizzle kewra essence before serving for extra aroma.
